3 1/3 lb apples, peeled, cored and cut into small chunks
1 cup apple juice
1/4 cup granulated sugar
3 tsp vanilla extract
2 tbsp butter
1 cup cookie crumbs + 2 tbsp
2 tbsp brown sugar + 1 tsp
2 cups heavy cream
Preparation

For the apple compote, bring apples, apple juice, sugar and 1 tsp vanilla extract to a boil. Cover and cook over medium heat for 12-15 mins, until apples are soft. Transfer to a bowl and allow to cool.
For the cookie crumbs, melt butter in a large frying pan and toast cookie crumbs for 2 mins. Add 2 tbsp brown sugar. Remove from heat and allow to cool.
To assemble, whip cream and 2 tsp vanilla extract until stiff. Transfer apple compote to a trifle bowl and top with toasted cookie crumbs then whipped cream. Sprinkle with 1 tsp brown sugar and chill for 1 hour.
