Wholewheat Pasta With Salmon And Broccoli - cooking recipe
Ingredients

2/3 lb wholewheat penne
1 lb broccoli, broken into florets
2 tbsp oil, divided
1/3 cup cashew nuts
2 tbsp tomato paste
1 tsp all-purpose flour
1 cups vegetable stock
Pinch None sugar
1/2 lb skinless salmon fillet, cubed
4 stalks parsley, chopped
Preparation

Cook the pasta according to the package instructions, adding the broccoli about 6 mins before the end of the cooking time.
Heat 1 tbsp of the oil in a large frying pan and roast the cashews, stirring, for about 4 mins. Meanwhile, in a separate pan, heat the remaining oil, add the tomato paste and cook for about 2 mins. Add the flour and stock, whisking until smooth. Bring to a boil and simmer for about 3 mins, stirring occasionally. Season to taste with salt, pepper and sugar.
Remove the cashews from the frying pan and add the salmon. Cook for about 3 mins. Drain the pasta and broccoli and add to the salmon. Heat for about 2 mins, then stir in the sauce and cashews. Serve sprinkled with parsely.
