Breaded Fish With Ratatouille - cooking recipe
Ingredients

4 None frozen breaded fish fillets
2 tbsp vegetable or olive oil
1 small red onion, finely chopped
1 small eggplant, finely chopped
1/2 cup reduced sodium vegetable stock
1 medium zucchini, finely chopped
1 large tomato, chopped
1/4 tsp red pepper flakes
None None Lemon wedges and mixed salad, to serve
Preparation

Preheat the oven to 400\u00b0F. Line a baking pan with parchment paper. Place the frozen fish on the prepared pan. Bake for 20 mins or until golden and cooked.
Meanwhile, heat the oil in a medium skillet on medium heat. Add the onion and cook and stir for 3 mins or until just soft. Add the eggplant and stock and cover. Cook, stirring occasionally, for 10 mins or until the eggplant softens. Add the zucchini, tomato and red pepper flakes and cover. Cook, stirring occasionally, for 10 mins or until the mixture is thick and the vegetables are soft.
Spoon the vegetable mixture onto serving plates. Top with fish. Serve with lemon wedges and salad.
