Spaghetti With Prawns In Tomato Sauce - cooking recipe

1 None yellow pepper, deseeded and finely diced
1 None onion, peeled and finely chopped
5 tbsp olive oil
2 None bay leaves
1 tbsp oregano, finely chopped
1 tbsp tomato puree
2 cans (425g each) tomatoes
150 ml vegetable stock
1 pinch caster sugar
400 g spaghetti
12 None raw prawns, peeled
1 clove garlic, peeled and finely chopped
25 g rocket
75 ml orange juice
1/2 None orange, zested
Preparation

For tomato sauce, heat 3 tbsp olive oil in a saucepan and sweat onion until soft. Add bay leaves and oregano and cook briefly. Add tomato paste, tomatoes and stock. Crush tomatoes, bring to a boil and simmer for 15 mins. Season and add sugar.
Meanwhile, cook spaghetti in boiling salted water according to package directions. Drain.
Heat 2 tbsp olive oil in a pan, saute peppers and set aside. Add prawns and saute for 3 mins. Add garlic and cook for 1 min. Season, remove from heat and set aside.
To finish, add pepper to tomato sauce along with orange juice and zest and cook until peppers are heated through. Toss with spaghetti and arugula and top with prawns.
