Quick Shepherd'S Pie - cooking recipe

Ingredients
    1 tbsp olive oil
    1 medium onion, finely chopped
    1 medium carrot, finely chopped
    1 None stalk celery, trimmed and finely chopped
    2 lbs ground lamb
    1/4 cup flour
    1 1/2 cups beef stock
    1/2 cup barbecue sauce
    1/2 cup tomato sauce
    1/2 cup frozen peas
    1 pkg (24 oz) refrigerated prepared mashed potato
    1 cup grated Cheddar cheese
Preparation
    Heat oil in large saucepan on medium-high heat. Cook onion, carrot and celery, stirring, until softened and lightly browned. Add lamb, cook, breaking apart with the back of a wooden spoon, for 5 mins or until well browned. Add flour, cook, stirring, for 2 mins. Gradually stir in stock, then sauces and peas. Simmer, uncovered, for 10 mins or until sauce thickens.
    Meanwhile, place mashed potato in a medium microwave-safe bowl. Heat in microwave on high (100%) for 2-3 mins or until heated through. Whisk until smooth.
    Preheat the broiler. Spoon lamb mixture into a 2 1/2-quart baking dish. Spread mashed potato over hot lamb mixture and sprinkle with cheese. Broil until topping is lightly browned.
