Grilled Shrimp With Mango And Feta Salad - cooking recipe

Ingredients
    18 oz raw shrimp, peeled, deveined, tails intact
    2 tbsp olive oil
    2 tbsp fresh parsley leaves, chopped
    2 cloves garlic, minced
    9 oz cherry tomatoes, halved
    7 oz baby arugula
    7 oz feta cheese
    1 None mango, pitted, peeled, chopped
    1 tbsp balsamic vinegar
Preparation
    In a medium bowl, combine shrimp, 1 tbsp oil, parsley and garlic. Marinate for 5 mins. Season to taste.
    Preheat grill. Grill shrimp for 1-2 mins per side, or until just pink and cooked to your liking.
    In a large serving bowl, combine tomatoes, arugula, feta and mango. Top with shrimp. Whisk together remaining oil and balsamic vinegar. Season then drizzle over salad to serve.
