Quinoa Cookies - cooking recipe

Ingredients
    7 tbsp butter, chopped
    1/3 cup firmly packed brown sugar
    1/3 cup honey
    1/3 cup smooth peanut butter
    1 tsp vanilla bean paste
    1 1/2 cups rice flour
    1 cup quinoa flakes
    1 tsp baking powder
    None None Powdered sugar, to dust
Preparation
    Preheat the oven to 350\u00b0F. Grease and line 2 baking pans with parchment paper.
    Combine the butter, brown sugar, honey, peanut butter and vanilla in a saucepan on low heat. Stir for 5 mins or until melted and combined. Cool slightly.
    Combine the rice flour, quinoa and baking powder in a large bowl. Stir in the cooled peanut butter mixture to form a dough. Roll heaped tablespoons of dough into 20 balls. Place on prepared pans about 2 inches apart and flatten slightly. Refrigerate for 15 mins.
    Bake for 15 mins or until golden brown. Cool completely in pans on wire rack (the cookies will firm up). Serve dusted with powdered sugar.
