Limoncello - cooking recipe

Ingredients
    6 None lemons, peel only, sliced, without pith
    4 cups vodka
    2 1/2 cups sugar
Preparation
    Combine lemon and vodka in a sterilized sealable bottle. Store in a cool, dark place for 1 month. Shake container every few days.
    Place sugar and 2 1/2 cups water in a medium saucepan on low heat. Stir 3-4 mins, until sugar dissolves. Increase heat to medium; bring to a boil. Cook, without stirring, for 5-6 mins, until the syrup thickens.
    Strain vodka through a fine sieve and discard peel. Add to sugar syrup, stirring to combine. Pour into sterilized airtight bottles; seal.
