Pistachio Biscotti - cooking recipe

Ingredients
    3 None egg whites
    1/3 cup granulated sugar
    1/4 tsp ground cardamom
    1 tsp orange zest
    1 cup all-purpose flour
    1 cup pistachios
Preparation
    Preheat oven to 350\u00b0F. Grease a 10x3 inch loaf pan. Line base and sides with parchment paper, extending paper 3/4 inch above long sides.
    Whip egg whites to soft peaks. Gradually add sugar, beating after each addition until sugar dissolves. Fold in cardamom, orange zest, flour and nuts. Transfer to prepared pan and bake for 30 mins, or until lightly browned. Let cool in pan then wrap in foil and let stand overnight.
    Preheat oven to 275\u00b0F. Using a serrated knife, cut bread into 1/8 inch slices. Place on baking trays and bake for 15 mins, or until dry and crisp. Transfer to wire racks to cool completely.
