Sausage And Spinach Pasta - cooking recipe

Ingredients
    1 lb sausages, chopped
    1 tsp olive oil
    1 None large leek, thinly sliced
    2 cloves garlic, minced
    1 cup chicken stock
    3.5 oz roasted red peppers, cut into strips
    9 oz farfalle pasta
    5 oz baby spinach
    2 tbsp shredded fresh basil leaves
    1/4 cup grated Parmesan cheese
Preparation
    Heat a large frying pan over high heat. Cook sausages for 5 mins, or until browned all over. Remove from pan and set aside.
    Reduce heat to medium and add olive oil. Cook leek and garlic, stirring, for 5 mins, or until soft. Return sausages to pan along with stock and peppers. Bring to a boil then reduce heat to low and simmer for 2 mins, or until sausages are cooked through. Remove from heat.
    Meanwhile, cook pasta in boiling salted water until al dente. Drain and return to saucepan. Add sausage mixture, spinach, basil and 1/2 the Parmesan. Cover and let stand for 3 mins, or until spinach has wilted. Serve sprinkled with remaining Parmesan.
