Passionfruit 'Yoyos' (Australian Cookies) - cooking recipe

Ingredients
    None None COOKIES
    1 1/3 cups butter, at room temperature
    1/3 cup powdered sugar
    2 None passionfruits, pulp scooped out
    1 tsp vanilla extract
    1/2 cup all-purpose flour
    1/2 cup cornstarch
    None None BUTTERCREAM
    4 tbsp butter, at room temperature
    1 cup icing sugar
    1 None passionfruit, pulp scooped out
Preparation
    Preheat oven to 350\u00b0F. Line 2 baking sheets with parchment paper.
    For the cookies, beat butter, powdered sugar, passionfruit and vanilla extract in a medium bowl with an electric mixer until pale and creamy. Sift flour and cornstarch over butter mixture. Using a wooden spoon, stir to combine.
    Roll rounded teaspoons of dough into balls. Place on prepared sheets. Using the palm of your hand, slightly flatten each ball into 1 1/2 inch rounds. Using a floured fork, press gently into dough rounds to create grooves. Bake for 12 mins, or until light golden. Cool on sheets for 5 mins. Transfer to a wire rack to cool completely.
    For the buttercream, beat butter, powdered sugar and passion fruit with an electric mixer in a small bowl until pale and creamy. Sandwich biscuits together with 1-2 tsp buttercream.
