Cheesy Asian Noodle Casserole - cooking recipe

Ingredients
    10.5 oz whole grain noodles, cooked and rinsed in hot water to separate strands
    8.75 oz sweet potato, peeled and cut into 1/3 inch pieces
    7 oz broccoli florets, quartered
    1/2 None small red pepper, deseeded and finely chopped
    2 None spring onions, finely chopped
    5 None eggs
    3/4 cup heavy cream
    7 oz Cheddar cheese, grated
    2 tbsp sesame seeds
Preparation
    Preheat oven to 325\u00b0F. Grease and line a 10 x 6 inch baking pan with parchment paper. Bring a pot of water to a boil then reduce to a simmer. Place a steamer basket on top, add sweet potatoes and steam for 7 mins. Add broccoli and steam for another 3 mins. Transfer to a large bowl and toss with noodles, pepper and spring onions. Transfer to prepared pan.
    Whisk together eggs, cream and 3.5 oz cheese. Pour over vegetables then stir to distribute mixture evenly. Top with remaining cheese and sesame seeds and bake for 50-55 mins, or until golden brown and just set. Let cool in pan for 15 mins then cut and serve.
