Cajun Chicken Pitas - cooking recipe
Ingredients

4 None boneless, skinless chicken breasts
3 tbsp olive oil
5 tbsp Cajun seasoning
2 None small ripe avocados, peeled and stoned
3 tbsp lemon juice
6 None pita breads
6 oz mixed baby greens
1 None red onion, peeled and thinly sliced
None None Sour cream, to serve
None None Tomato salsa, to serve
Preparation

Place the chicken between 2 sheets of plastic wrap and beat with a rolling pin to flatten slightly. Brush chicken with olive oil and sprinkle with Cajun seasoning to coat.
Heat a grill pan until very hot. Cook the chicken for 4-5 mins each side until golden and cooked through.
Mash the avocado with the lemon juice and season to taste. Spoon into a bowl and cover with plastic wrap until ready to serve.
Slice the chicken into chunky pieces. Split open the pita breads and fill with mixed greens, red onion and chicken. Serve with the avocado dip, sour cream and tomato salsa.
