10 oz beets, peeled, grated
4 None large eggs
1/2 cup unsweetened cocoa powder
6 tbsp honey or maple syrup
1 tbsp apple cider vinegar
1 tsp baking soda

3 tbsp virgin coconut oil or unsalted butter
2 tbsp honey
2 tbsp unsweetened cocoa powder
1 tsp vanilla extract
Preparation

Preheat oven to 350\u00b0F.
Combine grated beets, eggs, cocoa powder, honey, vinegar and baking soda in a large bowl and mix until well combined. Distribute between 4 (8 oz) ramekins and bake for 20 mins.
Meanwhile, to make the chocolate sauce, melt coconut oil and honey together in a small saucepan over medium heat. Remove from heat and whisk in cocoa powder and vanilla until combined. Pour over cakes and bake for another 15 mins, or until cakes rise but are still slightly soft in the center. Serve warm.
