Ingredients

20 g butter
4 medium eating apples, cored and cut into wedges
3 tbsp maple syrup
1 tsp lemon juice
250 g mascarpone
100 g low fat yogurt
3-4 tbsp icing sugar
2 tbsp Calvados (or apple juice)
100 g whipping cream
None None cocoa powder, for dusting
4 None Amarettini biscuits
Preparation

Heat the butter in a medium sized pan. Add the apple and cook, stirring, for 2 minutes. Add the maple syrup and lemon juice and cook, stirring, for another 2-5 minutes until the apples have softened, but still retain their shape. Remove from the heat and set aside to cool.
Place the mascarpone, yogurt, sugar, and brandy (or apple juice) in a mixing bowl and stir until smooth. Beat the whipping cream until soft peaks form. Fold into the mascarpone mixture.
Layer the creamy mascarpone mixture and cooled apple mixture into dessert glasses. Dust with cocoa powder and serve with Amaretti cookies.
