Bacon-Wrapped Cod With Spinach - cooking recipe

Ingredients
    4 None cod fillets
    8 slices bacon
    4 tbsp olive oil
    2 cloves garlic, minced
    10.5 oz spinach
    1/3 cup pine nuts, toasted, chopped, 2 tbsp reserved to garnish
    None None toasted French bread or ciabatta, to serve
Preparation
    Preheat oven to 400\u00b0F.
    Wrap each cod fillet tightly in 2 slices of bacon, tucking ends under fish to secure. Place in a baking dish and season. Drizzle 2 tbsp olive oil over top and bake for 20 mins, until bacon is crisp and fish is opaque and firm.
    Heat remaining oil in a deep pan. Add garlic and cook for 1 min. Add spinach and cook for 2-3 mins, until just wilted. Add pine nuts and toss to combine. Transfer to 4 serving plates. Top each with a cod filet and pour cooking juices over top.
    Garnish with reserved pine nuts. Season. Serve with toasted French bread or ciabatta.
