Shrimp And Gremolata Pasta - cooking recipe

Ingredients
    9 oz spaghetti
    1 tbsp olive oil, plus additional, to serve
    2 lbs medium shrimp, peeled and deveined, with tails intact
    3 large tomatoes, chopped
    1 None shallot, thinly sliced
    1/4 cup vermouth
    1 None lemon, peel finely grated and lemon juiced
    1 tsp brown sugar
    1 cup finely chopped parsley
    2 cloves garlic, finely chopped
    1 None orange, peel finely grated
Preparation
    Cook pasta in large saucepan of boiling salted water according to package directions. Drain well, reserving 1/3 cup of cooking water.
    Meanwhile, heat oil in a large skillet on medium heat. Cook shrimp 2-3 mins, until they change color. Transfer to a bowl.
    Saute tomato and shallot in same pan 3-4 mins, until tender. Add vermouth and simmer, stirring, 1 min. Stir in lemon juice and sugar.
    For the gremolata, combine parsley, garlic and lemon and orange peels in a small bowl. Season to taste.
    Add shrimp, pasta, reserved cooking water and 3/4 of the gremolata to the skillet. Toss to coat. Serve drizzled with additional oil and remaining gremolata.
