Ham And Rice Loaf - cooking recipe

Ingredients
    10.5 oz long-grain white rice, cooked, cooled
    5 oz frozen mixed vegetables, thawed
    4 oz Cheddar cheese, grated, a little reserved to sprinkle
    1/2 cup tomato salsa
    3 None spring onions, thinly sliced
    2 None large eggs, lightly beaten
    5 oz ham, cut into thin strips
    4 oz roasted red peppers, cut into strips
    None None mixed salad greens, to serve
Preparation
    Preheat oven to 350\u00b0F. Line an 8x4 inch loaf pan with parchment paper.
    In a large bowl, combine rice, vegetables, 3 oz cheese, salsa, spring onions and eggs. Season. Press 1/2 into prepared pan and sprinkle with remaining cheese. Top with ham and pepper strips, pressing down firmly. Top with remaining rice mixture and sprinkle with reserved cheese. Bake for 20-25 mins, until firm to touch and golden brown. Let stand for 10 mins.
    Slice and serve with mixed salad greens.
