Beef And Sweet Potato Stew - cooking recipe
Ingredients

2 1/4 lb beef stew meat, cut into 3/4 inch pieces
1/2 cup all-purpose flour
2 tbsp olive oil
3 None onions, halved
2 cloves garlic, minced
2 slices bacon, roughly chopped
2 tbsp tomato paste
3 cups beef stock
1 (13.5 oz) can chopped tomatoes
1/4 cup Worcestershire sauce
2 None potatoes, peeled, roughly chopped
1 None sweet potato, peeled, roughly chopped
1 None red pepper, deseeded, chopped
1 tbsp fresh thyme leaves
None None mashed potatoes or crusty bread, to serve
Preparation

Lightly coat beef in flour, shaking off excess. Heat oil in a large saucepan. Cook beef, in batches, until browned. Set aside.
Cook onions, garlic and bacon in same pan, stirring, until bacon is crisp. Add tomato paste and cook, stirring, for 1 min. Return beef to pan along with stock, tomatoes and Worcestershire sauce. Bring to a boil then reduce heat and simmer, covered, for 1 hour, stirring occasionally.
Add potatoes, sweet potato and pepper. Simmer, uncovered, stirring occasionally, for 30 mins, or until beef is tender.
Sprinkle with thyme. Serve with mashed potatoes or crusty bread.
