Beef Fajitas - cooking recipe

None None FOR THE FRESH TOMATO SALSA
1 large tomato, seeded and finely chopped
1 small red onion, finely chopped
2 tsp finely chopped drained jalapeno chili peppers (optional)
2 tbsp finely chopped fresh cilantro
2 tsp lemon juice
None None FOR THE BEEF FAJITAS
10 oz beef sirloin steak
8 None flour tortillas (6-inch), warmed
1 small red pepper, seeded and thinly sliced
1 small green pepper, seeded and thinly sliced
1 small yellow pepper, seeded and thinly sliced
1 medium red onion, thinly sliced
1 1/2 cups finely shredded iceberg lettuce
1/2 cup coarsely grated Cheddar cheese
Preparation

For the fresh tomato salsa, combine all ingredients in a medium bowl. Season to taste.
Cook the beef on a heated oiled grill pan (or in a skillet or on the grill) for about 3 mins on each side or until cooked to desired doneness. Cover the beef and let stand for 10 mins, then slice thinly.
Meanwhile, cook the peppers and onion in the same pan until the vegetables are tender.
Divide the beef, pepper and onion among the tortillas. Top with lettuce, cheese and fresh tomato salsa. Roll to enclose the filling.
