Parmesan And Olive Soda Bread - cooking recipe

3 1/4 cups self-rising flour, sifted
3 tbsp butter, cold, chopped, plus extra to serve
2 oz Parmesan cheese, grated
2.5 oz pitted olives, sliced
1/2 cup fresh chives, snipped
1/4 cup milk, plus 1 tbsp to brush
Preparation

Preheat oven to 350\u00b0F. Lightly grease a baking tray.
Combine flour with a pinch of salt. Cut in butter until mixture resembles coarse breadcrumbs. Add 1 oz Parmesan, olives and chives. Add milk and mix until just combined. Turn out onto a lightly floured surface and knead lightly. Form into a disc. Place on prepared tray. Brush with milk and sprinkle with remaining Parmesan. Bake for 45-50 mins, until golden brown. Let cool on a wire rack.
Serve warm with butter.
