Herb Crusted Fish - cooking recipe
Ingredients

4 None halibut or cod fillets, about 1/4 lb each
1 tbsp olive oil
2 oz breadcrumbs
1 tbsp chopped dill
1 tbsp chopped parsley
1 tbsp chopped basil
1 tbsp lemon zest
None None roasted tomatoes and green beans, to serve
Preparation

Preheat oven to 400\u00b0F. Line a baking sheet with parchment paper. Toss the fish with the olive oil and season to taste.
For the topping, combine breadcrumbs, dill, parsley, basil, and lemon zest and a small bowl. Season to taste.
Heat a frying pan on high. Cook fish, skin-side down, 3-4 mins, until golden. Transfer to the baking sheet, skin-side down. Press crumb mixture firmly onto fish. Bake 8-10 mins until topping is golden and fish is just cooked through. Serve with roasted tomatoes and green beans.
