Chocolate Pudding Cakes - cooking recipe

Ingredients
    8 tbsp (1 stick) butter, at room temperature
    1/2 cup sugar
    2 None eggs
    1 tsp vanilla extract
    2 tsp instant coffee
    1 tbsp milk, warmed
    1 1/4 cups self-rising flour, sifted
    4 oz semi-sweet chocolate, melted
    None None Ice cream or whipped cream, to serve
    None None FOR THE SAUCE
    1/2 cup packed brown sugar
    1 tbsp unsweetened cocoa powder
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease four 1 1/4-cup baking dishes, or one 5-cup baking dish.
    Beat butter and sugar in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
    Dissolve coffee in milk. Fold flour into batter alternately with milk mixture. Stir in melted chocolate. Spoon evenly into dishes.
    For the sauce, combine 1 cup boiling water, brown sugar and cocoa powder in a medium bowl. Pour evenly over each pudding.
    Bake 15-20 mins (35-40 mins for large dish), until puffed. Serve hot, with ice cream or whipped cream.
