Honey, Lavender And Pistachio Praline - cooking recipe

Ingredients
    1 2/3 cups toasted pistachios
    1 tsp lavender petals
    1 cup sugar
    2 tbsp honey
    80 ml water
Preparation
    Line a large baking tray with parchment paper. Scatter pistachios and lavender evenly over tray. Set aside.
    In a medium saucepan, combine sugar, honey and 1/3 cup water. Stir over low heat until sugar dissolves. Bring to a boil and cook for 8-10 mins, without stirring, until a light golden caramel (hard-crack stage). Allow bubbles to subside then pour over pistachios and lavender. Tilt tray, spreading caramel into a thin layer. Set aside to cool completely. Break into shards to serve.
