Baked Potatoes - cooking recipe

Ingredients
    6 None small baking potatoes, such as Idaho
    6 tbsp softened butter
    6 tbsp sour cream
    1/2 cup shredded Cheddar cheese
    1/4 cup chopped scallion
    1/4 cup crispy bacon, crumbled
    None None fresh parsley sprigs, for garnish
Preparation
    Preheat oven to 400\u00b0F. Piece potatoes with the tip of a knife. Bake for 1 hour, or until cooked to your liking. Let cool for 10 mins then cut off tops and scoop flesh out into a mixing bowl. Add butter, sour cream, 1/3 cup cheese, scallion and bacon. Season. Stuff back into potato shells and bake for 15 mins, or until heated through. Top with remaining cheese and bake for another 5 mins, or until cheese melts. Serve hot.
