Hot Smoked Salmon Salad - cooking recipe

Ingredients
    13.5 oz fettuccine pasta
    14 oz hot-smoked salmon, flaked into large pieces
    3.5 oz baby arugula
    1 None medium avocado, roughly chopped
    1 None cucumber, halved, thinly sliced
    1 small bulb fennel , trimmed, thinly sliced
    2 oz baby capers, drained, rinsed
    None None FOR THE LEMON-MUSTARD DRESSING
    1 tbsp Dijon mustard
    2 tsp sugar
    2 tbsp olive oil
    1 tbsp lemon juice
Preparation
    Cook pasta in boiling salted water until tender. Rinse under cold water until cool then drain.
    Meanwhile, combine salmon in a large serving bowl with arugula, avocado, cucumber, fennel and capers.
    To make the lemon-mustard dressing, whisk together mustard, sugar, olive oil and lemon juice. Add to salmon mixture along with pasta and toss to combine.
