Trout With Almonds - cooking recipe
Ingredients

4 None ready-to-cook trout (about 10.5 oz each)
4 tbsp lemon juice
5 tbsp all-purpose flour
5 tbsp oil
5 tbsp butter
3 tbsp white wine vinegar
None Pinch sugar
7 oz mixed salad greens
5 tbsp flaked almonds
1 None lemon, thinly sliced
None None Flat-leaf parsley, for garnish
Preparation

Drizzle the trout with the lemon juice and season inside and out. Roll in the flour and tap off the excess.
Heat 2 tbsp oil and 3 tbsp butter in a non-stick frying pan. Fry the trout for 6 mins on each side. Lay side by side on a baking sheet and keep warm.
Combine the vinegar and sugar in a bowl and season to taste. Slowly whisk in 3 tbsp oil. Toss with the salad greens.
Heat 2 tbsp butter in a frying pan and fry the almonds until golden brown. Arrange the trout on serving plates and sprinkle with the almonds. Garnish with lemon slices and parsley and serve with the salad.
