Gluten Free Almond Corners - cooking recipe

2 1/4 cups sugar
15.5 oz gluten-free flour
2 tsp baking powder
2 2/3 cups unsalted butter, cold
2 tbsp fat-free quark (can substitute mascarpone)
2 None medium eggs
1-2 tsp vanilla extract
1 1/3 lbs ground almonds
3.5 oz apricot jam
3.5 oz dark chocolate

Preheat the oven to 350\u00b0F. Mix 3/4 cup of the sugar, the flour and baking powder in a bowl. Cut 1 1/3 cups of the butter into cubes and add to the flour along with the quark and eggs. Knead together to make a smooth dough. Wrap in plastic wrap and chill for about 30 mins.
For the topping, melt the remaining butter and stir in the remaining sugar, vanilla extract, ground almonds and 6 tbsp water. Grease a 14 x 16 inch baking sheet and roll out the pastry to fit. Warm the apricot jam, then spread over the pastry. Top with the almond mixture and spread smooth. Bake for about 25 mins.
Remove the cake from the oven and allow to cool slightly. While still warm, cut into 42 squares. Cut each square diagonally to make 84 triangles in total. Melt the chocolate over a warm water bath. Dip opposite corners of each triangle into the chocolate, and leave to set.
