Chicken Tabouleh With Hummus - cooking recipe

Ingredients
    1/3 cup bulgur wheat
    1 tbsp vegetable or olive oil
    1 lb ground chicken
    2 medium tomatoes, chopped
    1 small red onion, finely chopped
    2/3 cup chopped flat-leaf parsley
    1/3 cup chopped mint
    1 tbsp lemon juice
    8 None Boston or Bibb lettuce leaves
    1 container (8 oz) store-bought hummus, to serve
    2 None small red radishes, finely chopped, to serve
    None None Smoked paprika, to sprinkle
Preparation
    Place bulgur a medium bowl. Cover with boiling water. Cover with plastic wrap and let stand for 30 mins to soften.
    Heat 2 tsp of the oil in a large skillet on medium heat. Add the ground chicken; cook, stirring with a wooden spoon to break up lumps, for 5 mins or until cooked through. Remove from heat; cool slightly. Add to the bulgur.
    Add tomato, onion, parsley, mint, lemon juice and remaining 2 tsp oil to chicken mixture; stir to combine. Season with salt.
    Place lettuce on plates. Fill with chicken mixture. Top with hummus. Sprinkle radish and paprika over hummus.
