Turkey Cutlets In Peanut Sauce With Rice - cooking recipe
Ingredients

1 cup long-grain rice
1 1/2 tbsp butter
5 tbsp oil
4 None turkey cutlets, each cut into 3 pieces
2 None onions, peeled and diced
1 lb red peppers, deseeded and roughly chopped
1 tsp paprika
1 2/3 cups vegetable stock
3/4 cup whipping cream
1/3 cup peanuts, unsalted, little set aside for garnish
3 sprigs thyme, little set aside for garnish
None Pinch sugar
1 tbsp lemon juice
Preparation

Prepare rice according to package instructions, and stir in butter. Set aside and keep warm.
Heat 2 tbsp of oil in a roasting pan and brown the turkey in two batches, cooking for 2-3 mins each side and adding more cooking oil as needed. Set turkey aside and keep warm.
Heat 1 tbsp of oil in the hot pan and saute the onions and peppers for 3 mins. Add the paprika and season to taste. Pour in the stock and cream, bring to a boil and simmer, covered, for 6-8 mins. Add peanuts and cook for another minute. Puree the sauce in a blender. Add thyme and continue to simmer the sauce, covered. Add sugar and lemon juice and season to taste.
Serve the turkey, sauce and rice on plates, garnished with peanuts and thyme.
