Turkey Breast With Cranberry And Mustard Sauce - cooking recipe

Ingredients
    2 1/4 lbs turkey breast
    2 tbsp olive oil
    2 cups cranberry juice
    1 cup chicken stock
    1/2 cup dry white wine
    1/2 cup dried cranberries
    2 tbsp brown sugar
    1 tbsp Dijon mustard
    2 tsp balsamic vinegar
    2 cloves garlic, crushed
    1/2 tsp ground cinnamon
    2 tsp butter
    None None Potato wedges and mixed salad leaves, to serve
Preparation
    Preheat the oven to 350\u00b0F. Coat turkey breast with the oil and season to taste.
    Heat a large skillet on medium heat. Cook the turkey for 4-5 mins each side, until browned. Transfer to baking dish. Cover with foil. Roast for 35-40 mins, until cooked through.
    Meanwhile, for the sauce, combine the remaining ingredients except the butter in a medium saucepan on low heat. Stir until the sugar has dissolved. Bring to a boil on high heat. Reduce heat to low; simmer for 20-25 mins, until sauce thickens. Remove from the heat and stir in butter.
    Slice turkey and top with sauce. Serve with potato wedges and salad.
