Cauliflower And Ham Gratin - cooking recipe

4 1/2 tbsp butter
1/4 cup all-purpose flour
1/2 cup milk, warmed
2 oz Cheddar cheese, grated
2 tsp fresh thyme leaves

4 oz macaroni
1/2 head cauliflower, cut into florets
3.5 oz ham, chopped
2 oz peas
2 None spring onions, chopped
1/2 cup fresh breadcrumbs
1/4 cup grated Parmesan cheese
1 None fresh chili, finely chopped
Preparation

Preheat oven to 400\u00b0F. Place 4 individual shallow baking dishes on a baking tray.
To make the sauce, melt butter in a medium saucepan over high heat. Add flour and cook, stirring, for 1 min. Gradually stir in milk. Cook, stirring, until sauce boils. Simmer for 3 mins then add cheese and thyme. Season to taste.
Meanwhile, cook pasta in boiling salted water until al dente. Drain. Blanch cauliflower in boiling salted water for 5 mins. Drain and set aside. Return pasta and cauliflower to pan.
Add sauce to pasta and cauliflower. Add ham, peas and onions. Distribute between baking dishes.
Combine breadcrumbs, cheese and chili. Sprinkle over pasta and bake for 15-20 mins, or until golden brown. Serve hot.
