Rich And Fragrant Pork Stew - cooking recipe

Ingredients
    1 tbsp clarified butter
    1 1/2 lb lean pork stew meat
    4 None onions, thinly sliced
    1 None bay leaf
    5 None juniper berries
    6 None cloves
    1 tbsp paprika
    1-2 tsp cayenne
    2 1/4 lb small potatoes, peeled and halved if large
    1/2 lb button mushrooms
    1-2 tbsp all-purpose flour, mixed with 4 tbsp water to make a paste
    2 tbsp butter
    4 tbsp fresh parsley, chopped
Preparation
    Heat the clarified butter in a dutch oven or heavy-bottomed pan until hot, add the pork and sear, turning for 5-6 mins. Add the onions and continue to cook for another 5-6 mins. Season then add the bay leaves, juniper berries, cloves, paprika and cayenne. Deglaze the pan with 2 1/2 - 3 cups water then cover the pan and simmer for 1 hour, stirring occasionally.
    Meanwhile, cook the potatoes in boiling, salted water for 15-20 mins, until tender then drain and keep warm.
    To finish, stir the mushrooms in to the stew. Add the flour and water mixture to the stew and simmer for 7-10 mins until thickened. Mix the potatoes with the butter and parsley. Divide the stew and potatoes between 4 bowls then serve.
