Orange And Watermelon Coolers - cooking recipe
Ingredients

1/2 None watermelon, flesh scooped out with a melon baller, juice reserved
4 None oranges, 2 peeled, segments removed, 2 juiced
1 tbsp cornstarch
2 tbsp sugar
3 tbsp orange liqueur
1 tbsp chopped pistachios
None None mint leaves, to garnish
Preparation

Place the fruit juices in a pan and add 1/2 cup water. Mix the cornstarch with 1-2 tbsp water until smooth, then add to the pan. Bring to a boil, stirring, until thickened. Mix in the sugar and remove from the heat. Stir in the orange liqueur. Chill.
To assemble, add the fruit to 4 cocktail glasses then pour in the chilled juice mixture. Sprinkle with pistachios and garnish with mint to serve.
