Lemon Tartlets - cooking recipe

1/2 cup all-purpose flour
2 tbsp powdered sugar
1/2 cup butter, cold, chopped
3 None eggs
1 cup granulated sugar
3/4 cup lemon juice
1/2 cup heavy cream
2 oz milk chocolate, melted

Preheat oven to 350\u00b0F. To make pastry, sift flour and powdered sugar into a medium bowl. Cut in butter until mixture resembles breadcrumbs. Add 1 tbsp ice water and mix until mixture just comes together. Gather dough into a ball then divide into 6 portions. Roll out each portion into a 5 inch disc. Gently press discs into 6 loose-bottomed tart pans (3 inch in diameter). Trim edges. Chill for 30 mins, or until firm.
Line tart shells with parchment paper and fill with pie weights. Place on a large baking tray and bake for 10 mins. Remove weights and paper and bake for another 10 mins, or until light brown. Let cool.
Reduce oven to 325\u00b0F. Whisk together eggs, sugar, lemon juice and heavy cream. Distribute between tart shells. Bake for 20 mins, or until just set. Let cool.
Transfer chocolate to a small piping bag fitted with a small plain tip. Pipe the word \"Lemon\" onto each tart. Let set. Serve.
