Artisanal Mushroom Pizzas - cooking recipe

3 None prepared pizza crusts (9 inches)
3/4 cup pizza sauce
1 cup grated mozzarella cheese
12 None button mushrooms, with stems
4 oz enoki mushrooms
1/2 cup chopped parsley
Preparation

Preheat the oven to 425\u00b0F. Line 2 baking pans with parchment paper.
Using a 3-inch cookie cutter, cut 4 rounds from each pizza crust. Place on the prepared pans. Spread each with 1 tbsp of sauce and sprinkle evenly with mozzarella. Place a button mushroom on each, trimming the bottom to stand upright.
Bake for 10-15 mins, until the crusts are golden and the cheese melts. Meanwhile, separate the enoki mushrooms into small bunches of 2 inch lengths. Top the cooked pizzas with mushrooms and sprinkle with parsley for grass and serve.
