Sticky Pear Pudding With Toffee Sauce - cooking recipe

Ingredients
    1 None cinnamon stick, halved
    1 tbsp lemon juice
    4 medium ripe pears, peeled, leaving stems intact
    1 cup (2 sticks) unsalted butter, at room temperature
    1 3/4 cups firmly packed brown sugar
    2 None eggs, lightly beaten
    1 tsp vanilla extract
    1/2 cup self-rising flour, sifted
    1 cup heavy cream
    None None Whipped cream, to serve
Preparation
    Place 2 cups water, cinnamon stick and lemon juice in a large microwaveable bowl. Stand pears upright in bowl. Microwave on medium (50%) for 15-18 mins or until tender. Remove pears from bowl; cool for 10 mins. Cut pears in half lengthwise and remove cores.
    Meanwhile, preheat the oven to 325\u00b0F. Lightly grease and line bottom and sides of a 8 x 4 inch loaf pan with parchment paper.
    Beat 1 stick butter and 3/4 cup brown sugar in a large bowl with an electric mixer on medium speed until creamy. Add eggs and vanilla; beat until combined. Fold in flour. Pour mixture into prepared pan. Press pears, standing upright into mixture.
    Bake for 50-55 mins or until a skewer inserted into center comes out clean. Cool in pan on a wire rack.
    Meanwhile, for the toffee sauce, place remaining 1 stick butter, 1 cup brown sugar and heavy cream in a medium saucepan on medium heat. Bring to a boil. Reduce heat to low and simmer for 10 mins or until sauce thickens. Slice and serve warm dessert with toffee sauce and whipped cream.
