Cumin Fish With Roasted Corn Salsa - cooking recipe

Ingredients
    2 None corn cobs, trimmed, kernels removed
    4-5 sprigs fresh cilantro, coarsely chopped
    1 None small red pepper, finely chopped
    3 None spring onions, finely chopped
    2 tbsp lime juice
    10 oz firm white fish fillets
    1 tsp ground cumin
    None None lime wedges, to serve
Preparation
    Saute corn in a frying pan over medium-high heat, stirring constantly. Transfer to a medium bowl along with cilantro, red pepper, spring onions and lime juice.
    Sprinkle fish with cumin. Sear in same pan over high heat. Serve topped with corn salsa. Serve with lime wedges.
