Pork Larb - cooking recipe

Ingredients
    1 tbsp vegetable or olive oil
    1 lb ground pork
    1/4 cup fresh Thai herb blend seasoning
    18 oz frozen Thai-style vegetables
    10 sprigs fresh cilantro, chopped, plus extra leaves for garnish
    2 tbsp lemon juice
    22 oz cooked jasmine rice
    1/3 cup salted roasted whole peanuts
Preparation
    Heat oil in a large frying pan over medium heat. Add ground pork and herb blend. Cook, stirring to break up lumps, for 5 mins, or until browned. Add vegetables, cover and cook for 4-5 mins, or until vegetables are heated through. Stir in cilantro and lemon juice.
    Spoon rice onto serving plates and top with pork mixture. Serve sprinkled with peanuts and extra cilantro.
