Tomato, Olive And Anchovy Pasta - cooking recipe

Ingredients
    1/2 cup extra virgin olive oil
    2 cloves garlic, minced
    1 tsp dried oregano
    6 None anchovy fillets, drained, finely chopped
    4 None medium tomatoes, chopped
    2 tbsp baby capers, drained
    3 oz pitted black olives, halved
    18 oz penne or other pasta
Preparation
    In a large frying pan, heat oil over medium heat. Cook garlic, oregano and anchovies for 1-3 mins, until fragrant. Add tomatoes, capers and olives. Cook, stirring, for 2-3 mins, or until heated through. Season to taste.
    Meanwhile, cook pasta in boiling, salted water until al dente. Drain then add to sauce and toss to combine. Serve.
