Cheesy Ham And Pineapple Muffins - cooking recipe

Ingredients
    2 1/2 cups flour
    1 tbsp baking powder
    2 tsp salt
    1 1/3 cups finely chopped ham
    1 cup grated Cheddar cheese
    1/3 cup snipped chives
    1 tbsp sugar
    1 1/4 cups milk
    1 None egg
    4 tbsp (1/2 stick) butter, melted
    1 can (16 oz) crushed pineapple, drained
Preparation
    Preheat the oven to 350\u00b0F. Line two 6-cup Texas muffin pans with paper liners.
    Sift flour, baking powder and salt into a large bowl. Stir in ham, half each of the cheese and chives, and the sugar.
    Whisk milk, egg and butter in a medium bowl. Add to the flour mixture with the pineapple; stir until just combined. Spoon evenly into muffins cups, filling each two-thirds full.
    Bake for 20 mins, until lightly golden and firm to a gentle touch.
    Sprinkle the tops of muffins with remaining cheese and chives. Return to oven for 4-5 mins, until cheese is melted. Cool in pans for 5 mins. Remove from pans; cool on a wire rack.
