Cream Of Asparagus Soup - cooking recipe

Ingredients
    2 tbsp butter
    1 None onion, diced
    1 lb asparagus, trimmed and cut into chunks
    2 cups vegetable stock
    1 cup milk
    2/3 cup creme fraiche
    2 tsp lemon juice
Preparation
    Melt the butter in a saucepan over medium heat. Saute the onion for 3 mins. Add the asparagus and saute for 3 mins. Add the stock and milk; bring to a boil. Reduce heat to low; simmer for 10 mins, removing a few asparagus tips after 3 mins and setting aside.
    Puree the soup in the blender or with an immersion blender. Stir in the creme fraiche and lemon juice. Season with salt and black pepper. Ladle into bowls and garnish with the reserved asparagus tips.
