Mushrooms With Halloumi, Tomatoes And Spinach - cooking recipe

1/2 lb small tomatoes, halved
2 tbsp extra virgin olive oil
1 lb small mushrooms
1/2 lb halloumi cheese, thinly sliced
2 oz baby spinach
1 None lemon, cut into wedges, to serve
Preparation

Preheat oven to 325\u00b0F. Arrange tomatoes on a wire rack placed over a baking tray. Drizzle with 2 tsp oil and season. Roast, uncovered, for about 40 mins, or until softened.
Meanwhile, toss mushrooms with 1 tbsp oil and season. Cook mushrooms and cheese on a heated, oiled skillet or grill until mushrooms are browned and tender and cheese is browned and crisp.
Layer mushrooms, spinach, tomatoes and cheese on serving plates. Drizzle with remaining oil. Serve with lemon wedges.
