Pan Fried Salmon With Prosciutto And Thyme - cooking recipe

Ingredients
    6 None Yukon Gold potatoes, peeled and quartered
    1/2 cup hot milk
    4 tbsp (1/2 stick) butter
    4 sprigs fresh thyme
    4 None salmon fillets (4-5 oz each)
    4 slices prosciutto
    1 tbsp lemon juice
    None None Green salad, to serve
Preparation
    Place potatoes in a saucepan and cover with cold water. Add a pinch of salt and bring to a boil on high heat. Reduce heat to medium and cook for 12-15 mins, until tender. Drain and toss on medium heat for 30 seconds, until dry. Mash until creamy, beating in hot milk and 2 tbsp of the butter. Season to taste, cover and keep warm.
    Place a thyme sprig on top of each piece of fish. Wrap a slice of prosciutto around the middle. Heat a nonstick skillet on medium-high heat. Cook fish for 2 mins each side, until opaque. Transfer to serving plates.
    Add remaining 2 tbsp butter to same skillet and melt on medium heat. When sizzling, stir in lemon juice. Spoon over fish and serve with mashed potato and green salad.
