Stuffed Potatoes With Smoked Salmon - cooking recipe

Ingredients
    1 lb small potatoes
    1 bunch chives, half finely chopped and half reserved
    1 tbsp sour cream
    9 oz ricotta cheese
    1-2 tbsp lemon juice
    1 pinch sugar
    6 slices smoked salmon, cut into strips
Preparation
    Boil the potatoes in salted water for about 20 mins. When tender, drain and plunge into cold water. Halve the potatoes lengthwise, scoop out the flesh, and lightly mash in a bowl.
    Mix the sour cream, ricotta, chopped chives and lemon juice with the mashed potato. Season to taste, adding a pinch of sugar if needed. Fill the potato skins with the mixture. Meanwhile, pour boiling water over the remaining chives and allow to steep for about 30 seconds. Drain and plunge in cold water.
    Place a strip of smoked salmon on top of each stuffed potato half. Wrap a chive around each potato, securing with a knot or a bow at the top.
