Madeira Cake - cooking recipe

1 cup butter, softened, chopped
1 1/3 cups granulated sugar, plus extra, for sprinkling
1 None lemon, zested and juiced
4 None eggs
2 cups self-rising flour, sifted
Preparation

Preheat oven to 350\u00b0F. Lightly grease and line 8 mini loaf pans.
Cream butter and sugar until light and fluffy. Beat in lemon zest. Add eggs, 1 at a time, beating well after each addition. Fold in flour and lemon juice. Distribute between loaf pans and sprinkle with extra sugar. Bake for 20-25 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.
