Paprika Chicken Casserole - cooking recipe
Ingredients

4 tbsp olive oil, divided
4 None chicken drumsticks
2 None onions, peeled and finely diced
2 cloves garlic, peeled and chopped
2 None red and green bell peppers, seeded and cut into strips
4 None tomatoes, diced
1 pinch paprika
3 stems thyme, chopped
3/4 cup dry white wine
1/2 cup vegetable stock
Preparation

Heat 2 tbsp of olive oil in a frying pan and brown the chicken over medium heat for 5-10 mins until golden brown. Heat 2 tbsp olive oil in a saucepan and saute the onions, garlic and peppers for 5 mins. Add the tomatoes and paprika and season to taste. Cover and simmer for about 10 mins.
Remove chicken legs from the frying pan and place in the tomato mixture. Add thyme, white wine and stock. Cover and simmer for 30 mins. Serve immediately with a baguette on the side.
