Aromatic One Pot Chicken - cooking recipe

Ingredients
    3 1/3 lb chicken thigh fillets, chopped coarsely
    1 2/3 cups chicken stock
    1/2 cup lime juice
    1/4 cup fish sauce
    1 (4 inch) piece fresh lemongrass, chopped finely
    1 (1 inch) piece fresh ginger, grated
    3 cloves garlic, minced
    9 oz small oyster mushrooms
    1 lb baby bok choy, chopped coarsely
    4 None spring onions, sliced diagonally
    1 None fresh red Thai chili, sliced thinly
    1/2 cup fresh cilantro leaves
    2 tbsp fresh mint leaves
Preparation
    Combine chicken, stock, lime juice, fish sauce, lemongrass, ginger, garlic and mushrooms in a 4.5-quart slow cooker. Cook, covered, on low, for 6 hours.
    Add bok choy and cook, covered, for 30 mins, or until bok choy is tender. Serve chicken mixture topped with remaining ingredients.
