Tomato And Bean Soup - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None onion, finely chopped
    1 clove garlic, crushed
    4 cups vegetable stock
    1 can (14 oz) diced tomatoes
    1 tbsp taco seasoning mix
    1 can (15 oz) pinto beans, drained
    8 slices bread
    3/4 cup grated Cheddar cheese
    None None Chives or parsley, to garnish
Preparation
    Preheat broiler on high. Line broiler with foil.
    Heat olive oil in a large saucepan on high heat. Saute onion and garlic 1-2 mins until onion is tender. Stir in stock, tomatoes and seasoning mix. Simmer 5 min. (Puree tomato mixture, if desired). Stir in beans and season to taste. Simmer 5 mins.
    Meanwhile, arrange bread slices on prepared pan. Broil until toasted on one side. Turn and sprinkle each evenly with cheese.
    Broil 1-2 mins until cheese melts. Serve soup sprinkled with chives or parsley. Accompany with cheese toast.
