Leek And Cauliflower Cheese - cooking recipe

Ingredients
    1 None cauliflower, broken into large florets
    4 slices bacon, chopped
    2 tbsp butter
    1 tsp oil
    1 None leek, trimmed and chopped
    2 tbsp flour
    None None Pinch of freshly grated nutmeg
    1 1/4 cups milk
    1 tsp ground mustard
    2/3 cup grated Cheddar cheese
    None None Warm crusty bread, to serve
Preparation
    Preheat the oven to 375\u00b0F. Cook the cauliflower in lightly salted boiling water for 4-5 mins until just tender. Drain. Transfer to a shallow baking dish.
    Cook the bacon in a medium saucepan until crisp. Sprinkle over the cauliflower.
    Wipe saucepan clean. Heat the butter and oil in the pan on low heat. Stir in the leek. Cover and cook for 6-7 mins. Add the flour and nutmeg. Cook, stirring, for 1 min. Remove from the heat. Gradually stir in the milk. Return to the heat; stir until the sauce boils and thickens. Add the mustard and season. Spoon the sauce over the cauliflower. Sprinkle with grated cheese.
    Bake for 20-25 mins until golden. Serve hot with warm crusty bread.
